A while ago at the Carriage Works markets I spoke to someone selling apple juice, I buy literally liters at a time from this stall and in that conversation the assistant to the person who runs it advised that her son had “special lids that makes things into alcohol”. I’d googled at length trying to {Tags: Brewing, Food Science, Technique} {More...}

Fairtrade coffee (a system intended to pay coffee farmers a fairer price for their product) always seemed a bit suspicious to me, largely because I know as someone who tries to eat (and drink) ethically, that pictures of happy coffee farmers wearing knitted clothing are probably more marchitecture than grounded in fact. I also know {Tags: Coffee, Fairtrade} {More...}

Last night I went to Tetsuya’s with friends, the 16th best restaurant in the world last year and considered either the best or the second best in Australia (battling Quay for the title each year). It was an absolutely phenomenal experience, thirteen courses of incredible Japanese, French and modern Australian style delicacies. We met first {Tags: Gourmet, Japanese, Restaurant} {More...}

Thai food is such a contemporary staple that it’s almost just “Aussie take away”. Pad thai, pad khee mao and green curry chicken are meals that Sydneysiders eat if they can’t be bothered cooking tonight, delivered on a motorbike from the place that you probably could’ve walked to. Longrain in Sydney’s “no bookings please, we’re {Tags: Chillies, Salad, Surry Hills, Thai} {More...}

Making your own sushi is nowhere near as hard as you’ve been led to believe. A lot of people worry about how hard it is to roll sushi rolls, you may have heard weird horror stories and you may have even seen that this non-problem solved with a sushi rolling machine. The truth is, you {Tags: Japanese, Rice, Sushi} {More...}

ABC Radio Brisbane has just mentioned on Twitter that Poh Ling Yeow, recently famous due to the TV show Masterchef, has offered that salt and pepper calamari is our national dish. It took my five minutes to calm down enough to be flabbergasted. I have some strong opinions about national dishes, and I want yours. {Tags: Australian, Poll} {More...}
